Yes that is two types of dessert in one title. A gooey chocolate center inside an pumpkin oat cookie. Fall meets decadent meets cookie monster!
I’ve been missing chocolate around here. I haven’t posted a chocolate recipe in almost a month, since these Chocolate PB Covered Strawbs (is that a thing, strawbs?). Not to say I haven’t been eating it, I eat chocolate in some form more days than not. But cacao-inclusive baking is what I’ve been missing.
And since I can’t seem to get my head out of the pumpkin patch, pumpkin + chocolate was the natural way to go. And a yummy one too! These two flavors go surprisingly well together, especially with a little cinnamon to pull them closer.
The pumpkin batter…that with a spoon could be it’s own dessert.
This dessert-stuffed dessert is surprisingly easy to make. No you don’t have to make two batters, bake twice, and meld them together with some sort of brownie stuffing magic. You just have to use dates. Dates and cacao make for the perfect rich brownie center that’s easy to wrap with pumpkin batter and stays perfectly gooey while the outside transforms into a cookie coat in the oven.

This cookie has a pretty impressive cross section…
- BROWNIE CENTER
- 8 pitted medjool dates
- 1½ tbsp cacao or cocoa powder
- PUMPKIN COOKIE
- 1 cup rolled oats
- ½ cup oat flour
- ½ cup pumpkin puree
- ½ cup coconut sugar
- 2 tbsps molasses
- 2-3 tbsps non-dairy milk
- 2 tsps baking powder
- ½ tsp cinnamon
- FOR THE BROWNIE CENTER: Blend the dates and cacao powder in a food processor until it forms a ball.
- Set aside.
- FOR THE PUMPKIN COOKIE: Preheat the oven to 350F.
- Combine all the ingredients in a large mixing bowl. Stir to combine (and steal a bite because it's really yummy!)
- Take a large portion of the pumpkin batter and flatten it in your palm. Place a ball of the brownie dough in the center. Close the pumpkin batter around it and shape into a ball.
- Place on a baking sheet lined with parchment paper pressing down slightly for more of a cookie shape
- Repeat for the remaining cookies.
- Bake for 10-12 mins at 350F.
- Let them cool then eat!
